THE FIRST COFFEE LAB IN EGYPT Founded in Alexandria, Wallen’s Specialty Coffee is the first coffee laboratory, specializing in daily roasted coffee. We respect coffee and its chemistry.

From extraction and brew temperatures to espresso machine pressure and grinder configuration, we have coffee down to a science.

Wallen’s was established as the 1st Egyptian Company in the market that embraced the philosophy of the 3rd Wave and the new coffee culture.

Although some people think is refers to coffee with a special flavor, like adding some syrup, this is not the case. Only The Specialty Coffee Association can define this quality classification.

They differentiate two grades of coffee: Special Grade and Premium Grade. You define the other grades as “Not classified by SCA”.

Water and its role in Café

In a cup of coffee 98% consists of water and the remaining 2% of the substances of coffee, so we understand to what extent water affects the quality of the drink. To date, great emphasis has been placed in coffee as a raw material, the espresso machine, the grinder and of course the “hand” of the barista to make an espresso drink. In the end, however, all this covers only 2% of the drink.

For all these reasons we at Wallen’s pay special attention to water quality. A specialized technician makes all the necessary measurements and suggests the ideal solution for your store. This results in a cup of better-quality coffee that highlights all its features.
